  • Brussels Sprouts are named after the capital city of Brussels so for that reason alone, the word Brussels should be capitalized. Also, Brussels sprouts are spelled E-L, not L-E. Not that common a misspell but it does happen.
  • Named after the region of Belgium where it has been a historically popular vegetable, the correct spelling is actually Brussels sprouts. Despite being more popular, the other is a misspelling. If you want to get real technical, the "B" should also be capitalized in the name since it's an ode to a proper name of a city/region.

The Chicago Manual of Style recommends lowercase because Brussels sprouts often aren't from Brussels, so their editors don't view “Brussels” as being used literally to refer to the city, but the AP Stylebook says to capitalize “Brussels.” For our first ruling, this one is kind of waffle-y.
